Hot Honey Chicken & Quinoa

Ingredients

  • 4 medium chicken breasts
  • A small amount of oil
  • Salt, black pepper, paprika, and blackened seasoning
  • 1 cup cooked quinoa
  • 1 tbsp avocado oil
  • 1 tbsp Dijon mustard
  • 1 tbsp sriracha
  • 1 tbsp hot honey
  • Onion powder, paprika, and dried parsley, to taste

Method

  1. Lightly oil the chicken, then season with salt, pepper, paprika, and blackened seasoning.
  2. Air fry at 199°C for 15 minutes, turning once, until the thickest breast reaches 74°C.
  3. Stir together the avocado oil, Dijon, sriracha, hot honey, and small pinches of onion powder, paprika, and dried parsley.
  4. Rest and slice the chicken.
  5. Portion with the quinoa and spoon the sauce over when serving.

Counterbook note
