Honey Garlic Chicken Fried Rice

Ingredients

  • 5 chicken breasts, cubed
  • Salt and black pepper
  • 2 tbsp honey
  • 2 tbsp soy sauce, plus more to finish
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • Frozen mixed vegetables
  • 340 g egg whites
  • 2 cups cooked white rice, preferably chilled

Method

  1. Mix the cubed chicken with salt, pepper, honey, 2 tbsp soy sauce, garlic, and sesame oil.
  2. Cook in a wide pan over medium-high induction heat until the thickest pieces reach 74°C. Remove the chicken.
  3. In the same pan, cook the frozen vegetables. Push them aside and add the egg whites.
  4. Once the egg whites set, mix them with the vegetables and add the rice. Stir-fry until steaming hot.
  5. Return the chicken, drizzle with soy sauce to taste, and heat everything through.
  6. Divide into four shallow containers and cool promptly.

Counterbook note

Use properly chilled rice and refrigerate leftovers within 2 hours. The source gives “5 chicken breasts” without a weight, so breast size will materially affect the published nutrition.
